Green tea: after withering green tea is fired or steamed, arresting the oxidation process. It is then rolled which breaks down the structure of the tea leaf and produces the final twisted shape. Low in caffeine & high in antioxidants green tea has a refreshing tangy vegetal taste.
Infusing: Green tea should be drunk without milk and infused in water 75 - 80 C. If tightly rolled or twisted use one level teaspoon per cup, if open or 'fluffy' use a heaped teaspoon per cup.
